This dish is so good I almost can’t stand it! It’s dairy and gluten free for all you friends who have to keep that in mind.
Salsa Chicken for the slow cooker-
It’s easy. Like crazy easy! I had all the things I needed at home already, hope you do too.
Place chicken at the bottom of the slow cooker.
Drain and rinse each: 1 can corn, 1 can black beans and 1 can pinto beans. Then add 2 1/2 -3 cups salsa. I used Pace Picante medium.
Add water (or broth), pour over chicken and squeeze fresh lemon on top.. Cook for 5 hours on high.
Shred chicken with two forks and stir so all the juices soak in. I let it cook for an additional 30 minutes and it was fantastic!
It’s that easy! Seriously delicious, healthy, quick and good for the family. Hope you like it.
Salsa Chicken (for the slow cooker)
Chicken breast (2 large + 1 small)
1 can corn drained and rinsed
1 can black beans drained and rinsed
1 can pinto beans drained and rinsed
2 1/2 – 3 cups Pace Picante Salsa (medium)
1/2 cup water (I think you could also use low sodium chick broth)
squeeze of lemon
Mix all ingredients and pour on top of chicken. I cooked on high for 5 hours because I used frozen chicken breast.
Serve with guacamole and tortilla or over a bed of rice.
